The winery

We are often asked, “What inspired the name Feldtheorie?” The term in English, Field Theory, originates in physics, where it describes the passing of information. Similarly, we believe that the grape vine passes information from the soil, climate, vintage and agricultural methods to us every time we take a sip of wine.

This belief inspires us to keep this sensory information as pristine as possible and therefore we keep interventions in the vineyard and cellar to an absolute minimum. More practically speaking, in the vineyard work with our hands whenever it’s practical. This in turn means minimal organic crop protection and high biodiversity. Down below in the cellar we use spontaneous fermentation and bottle our wines unfined and unfiltered.

The winemakers

Ulrike Filp and Robert Bormuth, together with our friends and family, are the behind Feldtheorie. During our studies of natural sciences we discovered our love for wine while on a trip to New Zealand. Once we finished our studies we knew: winemaking will be the focus of our lives going forward. We traveled abroad for internships in Germany, Australia and Austria before finally settling in the Wachau. Once the opportunity arose to buy our own parcels of vineyards in neighboring Kamptal we didn’t hesitate. Together we work in the cellar and vineyards trying to achieve one goal: passing on the uniqueness of the Kamptal through our wines to everyone.
